fat - (1) Substance extractable from tissue by 'fat-solvent' (such as ether or hot alcohol) and containing a fatty acid. Lipide, Lipid, Lipin and Lipoid have all been used as synonyms for fat in this sense; but they have also been given more restricted meanings. (2) In biochemical analysis 'fat' may refer simply to any substance extractable in fat solvent; and besides those containing fatty acids, would therefore comprise sterols (which however often occur chemically combined with fatty acids), steroids, carotene and, in plants, terpenes. (3) True (or neutral) fat is compound of glycerol and fatty acids.
