peptidase - An enzyme splitting peptides, and in many cases proteins, by attacking certain peptide links. Exopeptidases split off terminal amino-acids of a peptide chain. Endopeptidases split pep-tide chains by attacking links between certain amino-acids anywhere they occur in the chain; e.g. trypsin, pepsin, papain; since they break up proteins into large fragments they are often called proteinases.
